BACON WRAPPED CAULIFLOWER

Deliciously crispy on the outside and smooth, creamy and cheesy on the inside. 

This low-carb keto friendly Bacon-Wrapped Cauliflower is so outrageously mouth-watering, it will make even the pickiest eaters love vegetables. 

The entire head of cauliflower is covered in a creamy garlic, parsley and onion cheesy mix, wrapped in bacon and baked in the oven until crisp and golden on the outside.

Ingredients

  • 1 medium Cauliflower

  • 100 g Cream Cheese

  • 1 tbsp Finely chopped Onion

  • 1 large Crushed Garlic Clove

  • 1 tbsp Freshly chopped Parsley

  • 10 ca. Rashers of Bacon

Method

  • Cut the stalk out of the base of the cauliflower
  • Steam the whole cauliflower in 2-3cm of water, with the lid on until it’s almost done (insert a knife to test – it shouldn’t be too soft)
  • Fry the onion and garlic on low for 2-3 minutes. Add the parsley and fry for a further 2 minutes
  • Let it cool. Add the onion and garlic to the cream cheese in a bowl, and mix with a fork
  • Smother the cooled cauliflower with the cream cheese
  • Cover the cream cheese/cauliflower with rashers of bacon from top to bottom. Overlapping because the bacon will shrink. Tuck the overhanging bacon under the cauliflower
  • Bake in the oven at 200C for ca. 30 minutes
