Ingredients

  • 500 g Mushrooms Quartered

  • 1/2 Small Finely Chopped Onion

  • 3 Crushed Garlic Cloves

  • 1 tsp Ground Ginger

  • 2 tsp Ground Coriander

  • 2 tsp Ground Cumin

  • 1 tsp Ground Turmeric

  • 1 tsp Garam Masala

  • 1 tbsp Tomato PurĂ©e

  • 100 ml Vegetable Stock

  • Squeeze of Lemon to taste

  • Salt and Pepper

  • 1 tbsp Chopped Coriander

Method

  • Fry the mushrooms in very hot oil for 5-10 minutes until they are brown and cooked (if the oil isn’t hot enough they will release too much water) and all water has evaporated.
  • Remove from the pan and set aside.
  • Turn the heat to low, add another drizzle of oil to the pan and fry the onion with a pinch of salt for 10 minutes until soft.
  • Add the garlic and cook for a further 2-3 minutes.
  • Add all spices and tomato purĂ©e, and cook for a few minutes.
  • Add the vegetable stock and mushrooms.
  • Simmer gently for 10 minutes.
  • Season to taste with salt and pepper, lemon juice and coriander leaves.
  • Serve with naan bread.
