SWEET WAFFLES

Culinary historians believe waffles can be traced back to ancient Greece, where people roasted flat cakes between metal plates on long wooden sticks.

The Greeks called these cakes Obelios – Obelius is a derivative of the name Obelix – who, if you recall, was a friend to Asterix. He wore blue striped oversized trousers, a large moustache and pigtails under a metal horned helmet. Maybe his legendary midriff was possibly due to eating too many Obelius cakes i.e. Greek cakes. 

Hmmm…. but wasn‘t Asterix and Obelix of French Origin?

How long you cook the waffles for, as well as how many you make, will depend on the waffle iron you’re using…

I own several waffle irons; round, square, twin waffles – I advise you to preheat your oven to 120°C before you start so that you can pop the waffles on a wire rack as you make them, to keep them warm. This also helps to give them a lovely crisp crust.

Ingredients

  • Makes 8 mini waffles or 5 big ones.

  • 5 eggs separated

  • 3 tbsp Coconut Flour

  • 1 tsp Baking Powder

  • 4 tbsp Granulated Erythritol

  • 5 tbsp Almond Milk

  • 2 tsp Vanilla Extract

  • 2 tsp Almond Extract

  • 60 g Melted Butter

  • 60 g Smooth Almond Butter

  • To dust: Powdered Erythritol

Method

  • Preheat greased waffle maker.
  • Separate the eggs.
  • Whisk the egg whites until they are stiff. Set aside.
  • Mix all the other ingredients in a bowl and whisk until you have a creamy light coloured consistency.
  • Gently fold in the egg white until combined.
  • Put enough of the waffle mixture into the hot waffle maker, close and cook 4-5 minutes until you no more steam is escaping.
  • Repeat until all the mixture has been used.
  • Sieve powdered erythritol over the waffles.

  • MACROS by 8 waffles, per waffle: 1.5g Carbs – 10.7g Fat – 5.7g Protein – 162 Calories
